Localvores Get Their Fill at the Zorn Dining Commons

If you went to dinner at the Zorn Dining Commons on April 16, you were treated to a local feast. Sodexo partnered with its vendor, Black River Produce, and a total of 14 other local farmers and businesses to bring a taste of New Hampshire and Vermont to all of the stations in the Dining Commons. Among the featured dishes were seasoned and grilled top rounds (PT Farms, St. Johnsbury, Vt.), stuffed with a chicken and cheddar apple bratwurst (North Country Smokehouse, Claremont, N.H.) and served with a roasted shallot and blackberry brandy (Jenkins Spirits, Londonderry, N.H.) demi-glace, and Fried Maple Tofu (Vermont Soy, Hardwick, Vt.), sliced and served with a sweet apple cider (Cold Hollow Cider Mills, Waterbury Center, Vt.) reduction on a bed of baby spinach. Along with local foods, representatives from Black River Produce, Vermont Fresh Pasta, and North Country Smokehouse were available to interact with customers.
